Coconut Crunchie Biscuits: Health Benefits & Recipe

Coconuts are high in fibre and calcium. They are antioxidant, anti-bacterial, anti-viral and ant-inflammatory. They are anti aging and benefit skin disorders such as eczema, relieving dryness and flaking. They soften the skin; prevent age spots, wrinkles and sagging skin. They also provide protection from the damaging effects of ultraviolet rays from the sun.

1½ cups brown flour

1 cup oats

1 cup brown sugar

1 cup desiccated coconut

125g margarine

1 ½ tablespoons honey

½ teaspoon bicarbonate of soda

Preheat oven to 180 degrees

1) Line a biscuit tray with wax paper.

2) Mix the flour, oats, sugar and coconut in a large bowl; in a small bowl melt the margarine, honey and bicarbonate of soda in the microwave, add to the coconut mix and stir well; tip out onto the biscuit tray and using a damp spatula flatten the surface, pressing down well into the corners.

3) Bake for 20 – 25 minutes until golden brown and transfer to a wire rack; cut into squares immediately and store in an airtight container when cool.

About the Author

I was born in South Africa although my parents were originally from Lithuania. Much of my mother’s cooking was based on recipes handed down to her from past generations of Russian Jewry, hence my love for Eastern European food. However in London, where I lived for 20 years, I was introduced to healthy eating as well as the Macrobiotic diet, which I followed for a couple of years. Although I do not believe that one should follow any specific diet, this influenced my perception of food and made me realize what an important role food plays in our health and well being. For the past 20 years I have lived in Spain where I have been surrounded by Mediterranean and Middle Eastern cooking. I genuinely enjoy food and have always had a passion for cooking. I try as as far as possible to provide my family with healthy and nutritious meals whilst still remembering that “food is to be enjoyed”! So every now and again I sneak in a dish that may not be classed as beneficial to health but is so tasty and delicious that it simply must be tried!
