Egg Salad with Spicy Couscous

Serves 4

Jazz up a salad with spicy couscous and you have a nourishing and complete summer’s meal! The abundant use of herbs and spices provide us with plenty of health benefits as well.

1 head crispy lettuce leaves – shredded

1 medium cucumber – cubed

4 tomatoes – chopped

2 sticks celery – chopped

8 hard boiled eggs – cut in half

2 cups ready cooked couscous

½ cup raisins

3 large garlic cloves – chopped

1 heaped tablespoon dried oregano

1 heaped teaspoon turmeric

¼ teaspoon cayenne pepper

Olive oil

1)      Shred the lettuce leaves and arrange on individual serving plates; add the cucumber, tomatoes and celery; arrange the halved boiled eggs around the edge of the plate.

2)      Heat the oil in a small sauce pan over medium to high heat; sauté the garlic for ½ minute until browned; add the oregano, turmeric and cayenne; add the couscous and raisins; stir until the grains are coated with the spicy oil; spoon the couscous into the centre of each plate.

3)      Drizzle over extra virgin olive oil and balsamic vinegar and serve.

Turmeric improves circulation and prevents blood clots. It is regarded as a tonic for the liver as well as being a digestive stimulant.

About the Author

I was born in South Africa although my parents were originally from Lithuania. Much of my mother’s cooking was based on recipes handed down to her from past generations of Russian Jewry, hence my love for Eastern European food. However in London, where I lived for 20 years, I was introduced to healthy eating as well as the Macrobiotic diet, which I followed for a couple of years. Although I do not believe that one should follow any specific diet, this influenced my perception of food and made me realize what an important role food plays in our health and well being. For the past 20 years I have lived in Spain where I have been surrounded by Mediterranean and Middle Eastern cooking. I genuinely enjoy food and have always had a passion for cooking. I try as as far as possible to provide my family with healthy and nutritious meals whilst still remembering that “food is to be enjoyed”! So every now and again I sneak in a dish that may not be classed as beneficial to health but is so tasty and delicious that it simply must be tried!

    Nice little poem William! This is a recipe I´m going to try next. It should be a great summer salad and I´m happy to say that I can find all these ingredients in Marbella. Looks marvelous. I´ll let you know how it turned out.
